Homestead Harvest Pie (AKA – Shepherds or Cottage Pie)

Introduction 

Today, we embark on a comfort food odyssey to craft the legendary Shepherd’s or Cottage Pie. Or, as I like to call it, Homestyle Harvest Pie. This dish, perfect for cozy gatherings, will serve approximately 4 to 6 hungry souls. I often double or triple it for family dinners, as the leftovers are a big hit also!

The Flavorful Fellowship

  • 1 pound Ground Beef (or Lamb)
  • 2 tbsp Olive Oil
  • 1 cup Onion, diced
  • 2 tsp Parsley, dried
  • 1 tsp Thyme, dried
  • 1 tsp Rosemary, dried
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 2 Garlic Cloves, minced
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth
  • 2 tbsp Flour
  • 1 cup Peas and Carrots, frozen
  • ½ to 1 cup Sweet Corn kernels
  • 2 large Russet Potatoes, cubed
  • ½ cup Butter
  • ⅓ cup Half and Half
  • ¼ cup Parmesan Cheese
  • ½ tsp Garlic Powder

The Culinary Chronicles

  1. The Prelude: Preheat your oven to a roaring 400°F (200°C). In a skillet over a medium-high flame, let the olive oil dance with onions until they soften. Welcome the ground meat to brown.
  2. The Flavor Crescendo: Sprinkle in the herbs, salt, and pepper. Add the Worcestershire sauce, garlic, flour, and tomato paste. Once harmonized, introduce the broth and veggies. Bring to a boil, then simmer.
  3. The Potato Crown: Boil potatoes until fork-tender. Drain and mash with butter, half and half, parmesan, garlic powder, salt, and pepper.
  4. The Grand Assembly: In a 9×9 casserole, layer the meat mixture. Crown it with the mashed potatoes.
